Lead Mixer – Old Mission Bakery

Location: Traverse City, MI

Schedule: Full-time, early morning shifts 7 AM -2 PM

We’re seeking a dedicated Lead Mixer to oversee our dough production and ensure our kitchen operates smoothly. Responsibilities:

• Lead daily dough mixing operations according to recipes and production schedules.
• Accurately measure and scale ingredients for multiple batches.
• Operate and maintain commercial mixers and related equipment.
• Monitor dough quality, adjusting for hydration, temperature, and fermentation needs.
• Direct and coordinate with benchers, bakers, and prep staff to ensure efficient workflow.
• Maintain a clean, organized, and safe work area.
• Track ingredient usage and communicate supply needs to management.
• Train and mentor new mixing staff as needed.

Qualifications:

• Previous commercial baking or mixing experience preferred .
• Ability to lift 50–75 lbs repeatedly throughout the shift.
• Strong attention to detail and consistency.
• Ability to work in a hot, fast-paced, and noisy kitchen environment.
• Reliable, punctual, and able to work early morning shifts.
• Basic math skills for scaling and measuring recipes.
• Leadership skills and the ability to direct others.
