Position Summary:

Responsible for cleaning cutting portioning and merchandising all boneless meat products.

Essential Functions:

• Cleans trims slices and portions subprimals of beef pork lamb and veal for future processing.

• Inspects meat products for defects bruises or blemishes.

• Accurately reads and comprehends all customer specific instructions.

• Performs Quality Control checks and communicates with supervisors and managers regarding any defects.

• Separates meats and byproducts into specified containers and seals containers.

• Uses knives cleavers and other equipment to perform meat cutting and trimming.

• Weighs meats and tags containers for weight and contents.

• Follows the companys detailed product specifications.

• Performs other duties as assigned.

Knowledge / Skills / Abilities:

• Must have working knowledge of production equipment.

• Ability to portion all boneless cuts of meat in an accurate and timely manner.

• Ability to reduce processing costs but cutting and sizing portions accurately while continuing to meet customer specifications.

• Ability to problem solve in terms of trimming and product substitutions.

• Ability to work in a fast paced high pressure challenging environment

• Must be a team player and possess a positive attitude.

• Ability to effectively communicate both written and verbally in English.

• Must demonstrate the ability to understand the Meat Buyers Guide specifications as they relate to the companys internal product specifications.
