The Corporate Chef is the culinary leader of the kitchen and is responsible for driving excellence across all areas of food production and kitchen operations. This role oversees menu development, staff leadership, food quality, safety compliance, and cost control. KEY RESPONSIBILITIES
- Lead and manage all kitchen staff, fostering a positive, respectful, and collaborative work environment.
- Train, mentor, and develop Sous Chefs, Line Cooks, and Prep Cooks to ensure kitchen standards are upheld.
- Plan, design, and innovate menus that reflect seasonal availability, brand identity, and guest expectations.
- Ensure consistent preparation and presentation of all menu items according to brand standards.
- Collaborate with ownership and management to control food and labor costs and meet financial goals.
- Oversee food purchasing, vendor relations, inventory control, and food cost analysis.
- Maintain compliance with food safety regulations, health inspections, and kitchen cleanliness protocols.
- Partner with FOH leadership to support smooth service and guest satisfaction.
- Take ownership of kitchen scheduling, staffing decisions, and performance evaluations.
- Respond to emergencies or service disruptions promptly with strong problem-solving skills.
- Participate in company initiatives, events, and team meetings as a brand ambassador.
- Perform other leadership duties as required to ensure kitchen excellence and operational success.
- Minimum of 5 years of progressive kitchen experience, with at least 2 years in a Corporate Chef or equivalent leadership role.
- Culinary degree preferred or equivalent high-level experience in upscale or high-volume kitchens.
- Expertise in Mexican and/or Peruvian cuisine strongly preferred.
- Strong leadership, creativity, and organizational skills.
- Proven experience managing kitchen budgets, food cost controls, and vendor relationships.
- Advanced knowledge of food safety, sanitation, and kitchen health codes.
- Strong interpersonal communication skills and ability to lead with integrity and professionalism.
- Must uphold all Don Julio Restaurant Group uniform and grooming standards.
- Availability to work evenings, weekends, and holidays, including peak business periods.
This position requires the ability to:
- Stand and walk for extended periods (8–10 hours per shift).
- Lift and carry heavy items up to 50 pounds.
- Use commercial kitchen equipment including ovens, grills, knives, and mixers safely.
- Work in a hot, fast-paced environment under high service pressure.
- Perform repetitive motions and frequent bending, lifting, reaching, and twisting.
