Job Summary
We are seeking a skilled and motivated Assistant Bakery Manager to lead our night shift operations. The ideal candidate is a seasoned baker with proven leadership experience. You will work closely with the Bakery Manager to oversee all aspects of nighttime production, ensuring our team produces exceptional products efficiently, safely, and consistently. This is a hands-on role that requires both strong baking skills and the ability to manage a team effectively.
Key Responsibilities
Team Leadership: Supervise, train, and motivate the night shift team of bakers and support staff, fostering a positive and productive work environment.
Production Oversight: Manage the nightly production schedule to meet daily pars. Ensure all products are made to our quality standards and recipes are followed precisely.
Hands-On Baking: Actively participate in mixing, shaping, proofing, and baking as needed to support the team and lead by example.
Quality Control: Conduct regular checks on ingredients and finished products to ensure they meet our high standards for taste, texture, and appearance.
Inventory Management: Monitor inventory levels of raw materials (flour, sugar, yeast, etc.) and communicate needs to the Bakery Manager to prevent shortages.
Safety & Sanitation: Enforce and maintain strict adherence to all health, safety, and sanitation guidelines (including HACCP, FDA, and local regulations). Ensure the bakery is kept clean and organized.
Operations: Oversee the proper use and care of all bakery equipment. Troubleshoot minor equipment issues and report major maintenance needs promptly.
Communication: Maintain clear and concise production logs and provide a detailed hand-off to the morning bakery manager to ensure a smooth transition.
Qualifications and Skills
Required:
Minimum of 3 years of experience in a professional, from-scratch bakery environment.
Minimum of 1 year of experience in a supervisory or leadership role (e.g., Shift Lead, Sous Chef, or Assistant Manager).
Strong knowledge of baking principles including yeast raised dough.
Proven ability to lead, train, and develop a team.
Excellent time-management and organizational skills with the ability to manage multiple priorities in a fast-paced environment.
Must be able to stand for extended periods and lift up to 50 lbs.
Ability to work overnight shifts, weekends, and holidays as required.
Preferred:
Formal culinary or baking and pastry degree/certificate.
ServSafe Manager Certification or similar food safety certification.
Experience with high-volume production and scaling recipes.
Bilingual (English/Spanish) is a plus.
Schedule
This is a full-time, overnight position. The typical schedule will be approximately 9PM-5AM, 5 days a week. Flexibility is required based on production needs.
Compensation and Benefits
Competitive hourly rate: $18 - $20 per hour, commensurate with experience and a formal culinary or baking and pastry degree/certificate.
Estimated Weekly Tips: $60
