EXECUTIVE CHEF
UPSCALE STEAKHOUSE
BLOOMFIELD HILLS
$90,000 - $100,000
We are seeking an Executive Chef to lead the culinary vision of our upscale, made-from-scratch kitchen. We want a hands-on leader to drive exceptional fine-dining standards, mentor the back-of-house team, and manage operations to deliver an unforgettable dining experience for every guest.
Key Responsibilities
Culinary Excellence & Operations
- Menu Execution: Lead the execution of made-from-scratch dishes, focusing on quality, consistency, and proper presentation.
- Quality Control: Conduct daily line checks and tastings to ensure flavor profiles meet our high standards.
- Events & Banquets: Partner with the Sales Manager to design, cost, and execute menus for banquets, private dining, and special events.
Team Leadership & Mentorship
- Staff Development: Recruit, train, and mentor the Sous Chef, prep cooks, and line cooks. Implement development plans and provide ongoing coaching.
- Communication: Facilitate daily pre-shift meetings to align BOH staff with company goals and foster seamless coordination between BOH and FOH.
Financial & Inventory Management
- Cost Controls: Monitor food cost, labor budgets, and portion control to deliver targeted financial results.
- Supply Chain: Manage inventory levels, oversee ordering, and process invoices accurately.
- Safety & Compliance: Maintain a clean, sanitary facility and ensure 100% compliance with health, OSHA, and food safety regulations.
Guest Relations
- Tableside Presence: Enhance the dining experience by regularly visiting tables and engaging directly with guests.
Qualifications & Skills
- Experience: Minimum of 5 years as an Executive Chef or Chef de Cuisine in a fine dining or upscale, scratch-kitchen environment.
- Leadership: Proven ability to manage large kitchen teams in high-pressure, high-volume settings.
- Culinary Knowledge: Deep understanding of classic and modern cooking techniques, ingredient sourcing, and plating.
- Business Acumen: Strong proficiency in BOH budgeting, recipe mapping, and inventory systems.
- Certifications: ServSafe Certification or equivalent required.
