Nino Salvaggio is currently looking for a Corporate Executive Pastry Chef to be hands on and oversee the pastry operations in all 5 Nino Salvaggio locations.

This position is responsible for traveling between stores, instituting, evaluating and maintaining all standards of quality and performance of Nino Salvaggio’s pastry department. Will also be responsible for production and making pastry products for all locations in the commissary kitchen. The candidate must have a passion for pastry and love to jump on the line.

Also will Assist Store Managers in the development and implementation of plans to maximize sales, gross profits and overall results within their departments by controlling waste, shrink, theft, unacceptable quality and by identifying opportunities to increase sales through effective merchandizing and maintaining product availability.

Essential Job Functions, Duties and Responsibilities

  • Oversees and evaluates the taste, appearance and integrity of all prepared pastry products to ensure they comply with the company’s standardized recipes and our customer’s quality expectations.
  • Identifies and assists to correct improper and unsafe conditions as it relates to work stations, equipment, tools, food preparation, food storage, food packaging and food labeling procedures as identified by regulations established by The Michigan Department of Agriculture, The Michigan Department of Weights and Measures, and the 2013 FDA Food Code.
  • Adheres to all local, state and federal labor laws and OSHA and EEOC requirements ensuring that the work environment is safe and healthful and free from discrimination and harassment.
  • Follow scheduled hours, store operating hours and labor guidelines as scheduled or assigned by the Director of Culinary Operations.
  • Must be thoroughly familiar with and able to work with all products carried in the departments including being fully knowledgeable in the differences (in price, taste, preparation or use) between the many varieties and types of items offered in the departments. Adhere to all quality standards.
  • Works with Director of Culinary Operations, General Manager and the Director of Operations to research and develop products, determining the variety and quantity of products to be produced, according to orders and sales projections.
  • Follow approved procedures for receiving product, dating, price marking and restocking cases to ensure quality protection, public image, accuracy and product rotation.
  • Costing out products and determine retail costs for pastry products to achieve gross profits goals.
  • Checks and verifies department merchandise received to ensure that all items listed on vendor invoices are delivered. Check products for quality standards, count or weight and condition.
  • Comply with Company policies and procedures as outlined in the employee handbook and memos, and state and federal safety and sanitation policies, procedures, guidelines and laws; ensure that all employees within the department comply with company policies and procedures as outlined in the company handbook and memos, and state and federal safety and sanitation policies, procedures, guidelines and laws.
  • Maintains good communication within the department, in the store and throughout the organization. Develops associates within department through training, supervision, delegation and appropriate rewards and discipline.
  • Ensures favorable department image to customers by maintaining a clean, organized, attractive and friendly department.
  • Provides constructive and relevant feedback to the Director of Culinary Operations, Director of Operations, General Manager and Department Managers.
  • Follows and ensures compliance with all Nino Salvaggio International Marketplace safety and foodservice sanitation programs and standards.
  • Greets customers and provides them with prompt and courteous service and/or assistance, per our Company customer service standards. Must be able to work with all products available within the department.
  • The ability to motivate department managers and associates to achieve company sales and customer service goals.
  • Leads by example.
  • Other duties as assigned.

Supervisory Responsibilities: This position supervises any and all employees in the department. Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include: interviewing, hiring and training of employees; monitoring time and attendance; planning, assigning and directing work, appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Assists as needed with the supervision of other departments.



Qualifications, Knowledge, Skills and Abilities Required:

Must be proficient in the preparation of all types of pastries. Applicants must have exceptional interpersonal and teaching skills to assist in production and set standards for product quality and professional conduct.

  • Experience in stocking, rotation procedures, product knowledge, customer service experience, etc.
  • Ability to communicate both verbal and written sufficient to express an idea or thought.
  • Excellent knowledge of the products carried in the department.
  • Excellent organizational skills (detail oriented, goal oriented, follow through).
  • Great attitude (people skills, innovative, proactive).
  • Must demonstrate a strong knowledge of department operations and a proven track record of success in the overall operation of the department.

Certificates, Licenses, Registrations: Must have current Michigan Serve Safe certification.

Education and/or Experience:

A minimum 2-year Culinary Degree required with preference given to candidates which also have additional bakery or pastry education.

A minimum of 8 years of “hands on” pastry/baking experience with a minimum of 3 years of supervisory/ management or teaching experience in a production food service environment. Applicants with additional experience in pastry and artisan breads are preferred.



Must be able to calculate figures and amounts such as discount, gross margins, markup, percentages, ratios, ad loss, shrinkage and to apply basic concepts of algebra; ability to handle sales transactions, tender correct change, verify vendor invoice charges and counts and complete required accounting reports including inventory and receiving.

Compensation: $80,000.00 - $120,000.00 per year
